Stuffed Mushrooms with Oregano

Preheat oven to 350 degrees. Wipe mushrooms with damp paper towel.  Remove and mince stems.  Saute stems with garlic for 3 minutes.  Remove mix and add parsley, oregano, bread crumbs, parmesan, and salt and pepper to taste.  Mix well.  Stuff each cap to form a mound.  Arrange in a baking dish, pour wine into the dish, and bake for 10 minutes.  Then place the dish 2 “ from the broiler, and broil until the tops of the mushrooms are golden brown.  Serve hot or cold.

  • 12 large mushrooms
  • 3 TBS olive oil
  • 1 garlic clove, minced
  • 1/3 cup chopped parsley
  • 1 TBS chopped fresh oregano or 1 tsp dry
  • 1/3 cup fine, dry breadcrumbs
  • ¼ cup fresh, grated parmesan cheese
  • salt and fresh ground pepper
  • ½ cup dry white wine
